I believe italics have been suggested before... but what about strike through?

Italics and strikethrough are not part of the IRC protocol.

So it would take updates to servers everywhere and such?

Neither were colours until mIRC added them.

The addition of more control codes should be coordinated with other IRCd/client developers, though. argv0 made some good points on the recent italics thread.
