That depends of what server you wanna chat, we cannot tell you what channel the peoples chating, because exists thousands of servers and we dont know all of them!
But anyway you can do one thing:
When you connect to a server what you dont know were people are, you can do this, /list and then press [ENTER]; This gonna show you one list of all channel on that server, and the number of users on each channel!
