Like you can change your ident with /identd on blabla , is it also possible to change your quit message with such an alias ? I didn't find it right away.

You can change your quit message at the time of your quitting by using /quit <message>

yeah, but that message won't be your quit message the next time you just close down mirc without typing /Quit because it will not change the value in the settings right?

Correct... the only way (that I'm aware of) of changing that, is through the Options dialog.
