However, my Host still shows as

abush@host.com

And abush is the first part of my email address

Ok. So, if you do not use any proxy, and are not in any LAN, when you do /whois $me... you'll get this:
< your nick > is < User ID >@<your ip or host> * <your Full Name >

If you use some proxy, or are on some LAN you will get this:
< your nick > is <~ e-mail >@<your ip or host> * <your Full Name >

Ok lets say then I do use a proxy. How do I make my whois say this:

< your nick > is < User ID >@<your ip or host> * <your Full Name >

No way.
Change e-mail to whatever you want to be seen on whois (example "E-mail Address = <User ID>@blabla.com").
